The process begins with harvesting perfectly ripe Geisha cherries, which read between 22-24 on BRIX. The cherries are then carefully selected a second time before processing. After selection, the cherries are pulped, leaving a small percentage of fruit attached to the grain.

The coffee is then placed in tanks for an extended period, where conditions such as pH and temperature are constantly monitored. The ambient temperature is controlled to ensure consistency throughout the processing phase.

Once the required time inside the tanks has passed, the coffee is removed and placed on shaded, raised African beds. Here, the coffee is agitated every 30 minutes to ensure even drying. To prevent cracking in the parchment, direct sunlight is avoided. Temperatures inside the drying area are closely regulated, with a limit to ensure that excessive heat does not rupture the cell walls of the coffee, which could cause oils to escape and shorten the shelf-life of the coffee.

After drying to a moisture content of 10.5-11%, the coffee is bagged in GrainPro bags for storage

工艺特点

本批次Geisha精选糖度（BRIX）22–24的成熟咖啡樱桃进行采摘，确保果实处于最佳成熟阶段，为卓越风味奠定基础。

采摘后的咖啡樱桃在进入处理环节前，会经过严格的二次人工筛选，以进一步确保原料品质与均一性。

筛选完成后进行脱果皮处理（Pulping），并刻意保留少量果肉附着于种子表面，以促进后续发酵过程中更加丰富且细腻的风味形成。

随后，咖啡被置于发酵槽中进行长时间控制发酵。在整个发酵过程中，持续监测pH值与温度变化，并严格控制周围环境温度，以确保每一批次都能获得稳定且一致的发酵结果。

当发酵达到预定时间后，咖啡被转移至遮阴式非洲高架床（African Beds）进行缓慢干燥。

干燥期间，每30分钟翻动一次咖啡，使水分均匀散失。为了防止羊皮层（Parchment）产生裂纹，整个干燥过程避免阳光直射。同时，干燥区域内的温度也受到严格控制，以防止过高温度导致咖啡细胞壁破裂、内部油脂流失，并影响后续储存稳定性与风味表现。

最终，咖啡被干燥至10.5%–11%的理想含水率后，装入GrainPro专业储存袋中进行长期稳定保存，以确保生豆品质与新鲜度得到充分保障。
